#20: Easy Peasy Aglio Olio

Made this at the guys’ house tonight. With help from Gary as usual. 


  • Spaghetti (I used a mix of spinach linguine and wholemeal spaghetti)
  • Olive oil (Got a bottle of garlic and rosemary infused one)
  • Garlic, roughly chopped
  • Bacon
  • Mushrooms, sliced
  • Chillies, sliced 
  • Salt and pepper to taste
  • Grated parmigiano-reggiano to serve
  1. Cook the spaghetti according to the packet’s instructions till al dente. 
  2. While spaghetti is cooking, fry up the bacon till slightly crispy, put aside and reserve oil.
  3. Add olive oil, garlic and sliced chillies and allow its flavours to infuse in the oil for a bit. 
  4. Add mushrooms, and cook it until it becomes slightly soft
  5. Add the bacon and cooked spaghetti into the mixture and mix it up
  6. Salt and pepper to taste
  7. Top it with grated parmigiano-reggiano before serving. 

It was easy and simple. I shall try it with prawns next time (:
